Inspired by a dish I used to order at my favorite Mexican restaurant when I was first dating my wife, I’d like to think you’d be hard-pressed to find an easier or more flavorful take on Shrimp Diablo. This “one skillet” meal is ready in less than 30 minutes and is sure to become a favorite on your dinner rotation.

Description
This version of Camarones al la Diabla - or Shrimp Diablo - is fast and flavorful with an nice even heat that doesn't overpower the dish. Lime and avocado add a nice cooling touch with a mixed grill of vegetables that complete the meal.

Prepare the Sauce
In a large skillet, heat the olive oil and add the diced onions. Cook until softened and add the garlic. Saute until garlic begins to release it's fragrance.
Meanwhile, add tomatoes, chipotle with adobo, sugar, and cilantro to a blender. Season with salt.
Add sautéed onions and garlic to blender and fully blend. The consistency should be somewhat thick, like a milkshake.

Prepare the Mixed Vegetables
In the same skillet, add butter and melt over medium-high heat. Add red onion wedges and fry in the butter until each side begins to caramelize.
Add zucchini and squash. Continue to saute until browned.
Add corn along with oregano, garlic powder, salt, and pepper. Stir to combine with all the vegetables in the skillet and saute until the corn is just heated through, but still crisp.
Transfer vegetables to a baking dish and sprinkle with lime juice. Keep warm in the oven over low heat.

Cook the Shrimp
Add the tomato/chipotle mixture to the same skillet and heat over medium-high heat. Add shrimp to sauce and cook uncovered. Flip shrimp in skillet when they look about half-cooked from the bottom up. Stir and coat with sauce as the shrimp finish cooking. Total cook time per side will be about 5 minutes.
As you cook the shrimp, the sauce will continue to thicken. Be sure to occasionally stir the shrimp as they cook to avoid scalding the sauce. Shrimp are super easy to cook as you can see them change color as they cook. Look for the bottom half of the shrimp to turn white/orange - this is the telltale they are ready to be flipped. -
Serve
Add vegetables to a plate. Top generously with shrimp and sauce. Garnish with chopped cilantro, sliced avocado, and lime wedges.
