This nice, tart Lemon Curd will be right at home on any English table. Quick and easy to make, you’ll be whipping-up a fresh batch in no time!
This recipe makes about 14oz – which is great for table use – but can easily be scaled-up for desserts like Lemon Meringue Pie or Summer Citrus Parfaits.

Add all ingredients to a 2qt saucepan over medium-low heat. Stir regularly with a whisk as the butter begins to melt making sure to avoid allowing the eggs to scramble.
Continue cooking (and stirring) until curd begins to thicken and the whisk leaves tracks. When the first large bubble forms, remove the curd from heat.
Curd can be used warm or transferred to a container and chilled. Will last up to a week when covered and kept in the refrigerator.
